One of the most challenging aspects of traveling is food. With allergies and sensitivities, I have to be careful to stay in good health. The foods below are safe foods.
The list is pretty limited and some items which are common in the US may be harder to get in other countries. Occasionally, I may have to depart from this limited eating plan. However, there are consequences that range from allergic rashes to stomach ailments. Some can be eaten occasionally (once a month) without noticeable consequences while others cause immediate reactions.
YES! Kim can eat these:
Vegetables (fresh or frozen) Arugula Bell peppers (red, green, yellow, orange, not hot) Carrots Celery Chives Cucumbers Fennel Greens (collard, turnip) Lettuce Leeks Peas Okra Onions Radicchio Scallions String beans Water chestnuts Zucchini
Nuts and Nut Butters: (in limited quantities): Preferably raw, unroasted, and unsalted. Almonds Cashews Hazelnuts Macadamia Pistachios Unsweetened Almond Milk -plain or vanilla
Fruits: Avocado Olives (green and black)
Fresh or frozen, no more than one serving per day: Apples, Apricots, Blueberries, Cherries, Kiwi, Nectarines, Peaches, Pears, Plums, Raspberries

Eggs: Omega-3 enriched eggs

- Nightshades (potatoes, tomatoes, eggplant/arbigine)
- Beans (hummus, lentils, and more)
- Carbs that are not on this list (Rice, corn/maize, pasta, common grains.)
- Red meat
- Wine or alcoholic drinks
- Juice of any kind
- Peanut butter
- Shrimps, prawns, shellfish (Serious allergy to these!)
